Vegetable Summer Rolls
with Cilantro Dip |
| Ingredients for Summer Rolls |
2 tbsp |
Peanut oil |
2 tsp |
Minced ginger |
1/2 c |
Cilantro leaves |
1/2 c |
Thai dressing |
1 |
Med carrot, julienned |
8 |
Rice paper sheets |
1 |
Med zucchini, julienned |
2 |
Cloves garlic, minced |
1 |
Sm red pepper, seeded, julienned |

Sm yellow pepper, seeded, julienned |

Med yellow squash, julienned |
Preparation
Heat peanut oil in large nonstick skillet over med-high heat. Add carrot and peppers and stir-fry for 2 min. Add ginger and garlic. Stir-fry for an additional 2 min. Add zucchini and squash, cook 3 more min, keeping vegetables crisp.
Partly fill a plate with hot water. One at a time, dip rice paper sheets in water until softened, about 10 seconds. Blot dry. Lay sheet on clean work surface. Place a few cilantro leaves in center of each rice paper. Top evenly with veggies and drizzle Thai dressing. Fold ends of rice paper over filling, then roll tightly. Set seam side down on large platter ad cover with damp paper towel. Repeat with remaining rice paper and filling ingredients. Serve with cilantro dip.

Preparation
In small bowl combine all ingredients. Cover with plastic wrap and refrigerate until ready to serve. |
